Sweet Pulled Pork

Some people get tired of all the talk of new year resolutions. Goals that are made and then broken less than a month later. So, instead of that, I decided to post about my favorite subject: food.

The other day, we made sweet pulled pork. It was delicious! I usually have a recipe on hand, but I couldn’t find it. I looked several up and did a hybrid recipe.

3 lb pork roast

1 can of root beer

12 oz medium salsa (approximately)

Spices, such as garlic powder, cumin etc. Spice to taste.

Add it all in a crockpot and cook on high for 6 hours. Take the lid off and pull the pork with a fork, then cook on low until you’re ready to eat it. Yum!

Most recipes I’ve found call for added water. It isn’t necessary. The soda and the salsa along with the cooking pork provide quite enough juice. When it’s finished, you can eat it as it is, add corn starch (in water) to thicken it, or take out some of the juice and add as a liquid for some rice to serve on the side. I know I said this wasn’t about goals, but my goal is to have this at least one more time this year. Stay well, my friends!
